Cheers to Whiskey Chocolate Cheesecake
Graham Cracker Base
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/3 cup unsalted margarine, melted
Whiskey & Chocolate Filling
24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
1 cup sugar
1/4 cup all-purpose flour
1/2 cup whiskey
1/2 cup semisweet chocolate chips, melted
4 large eggs
Balsamic Glaze Topping
1/3 cup balsamic vinegar
2 tablespoons honey
Directions
Preheat oven to 350°F.
Mix together graham cracker crumbs, sugar, and melted margarine. Press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes or until golden brown. Let cool while preparing the filling.
Beat softened cream cheese and sugar together in a large bowl until smooth. Add flour, whiskey, and melted chocolate and beat until well combined.
Add eggs one at a time, beating well after each addition. Pour the mixture over the cooled crust and bake for 50-55 minutes or until the center is almost set.
Cool the cheesecake to room temperature before refrigerating for at least 2 hours.
While the cheesecake is cooling, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and honey. Cook over medium heat for 10-12 minutes or until thickened. Remove from heat and let cool.
Once the cheesecake has chilled, pour the balsamic glaze over the cheesecake and serve.
