Cheers to Whiskey Chocolate Cheesecake

Graham Cracker Base

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup unsalted margarine, melted

Whiskey & Chocolate Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 1/2 cup whiskey
  • 1/2 cup semisweet chocolate chips, melted
  • 4 large eggs

Balsamic Glaze Topping

  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey

Directions

  1. Preheat oven to 350°F.
  2. Mix together graham cracker crumbs, sugar, and melted margarine. Press into the bottom of a 9-inch springform pan. Bake for 8-10 minutes or until golden brown. Let cool while preparing the filling.
  3. Beat softened cream cheese and sugar together in a large bowl until smooth. Add flour, whiskey, and melted chocolate and beat until well combined.
  4. Add eggs one at a time, beating well after each addition. Pour the mixture over the cooled crust and bake for 50-55 minutes or until the center is almost set.
  5. Cool the cheesecake to room temperature before refrigerating for at least 2 hours.
  6. While the cheesecake is cooling, prepare the balsamic glaze. In a small saucepan, combine balsamic vinegar and honey. Cook over medium heat for 10-12 minutes or until thickened. Remove from heat and let cool.
  7. Once the cheesecake has chilled, pour the balsamic glaze over the cheesecake and serve.
