Rocky Road Cheesecake Recipe
Ingredients:
- 2 cups vanilla wafer crumbs
- 1/3 cup unsalted butter, melted
- 4 containers (8oz each) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
- 1 cup granulated sugar
- 3 eggs, at room temperature
- 1/2 cup sour cream
- 1/2 teaspoon vanilla extract
- 1/2 cup semisweet chocolate chips
- 1/2 cup chopped walnuts
- 1/2 cup mini marshmallows
Instructions:
- Preheat oven to 350°F.
- In a medium bowl, mix vanilla wafer crumbs and melted butter. Press mixture onto bottom of 9-inch springform pan.
- In a large mixing bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time.
- Stir in sour cream, vanilla extract, chocolate chips, walnuts and mini marshmallows.
- Pour mixture into crust.
- Bake for 1 hour and 10 minutes or until center is almost set.
- Let the cheesecake cool to room temperature on a wire rack, then refrigerate for at least 3 hours or overnight.
- Before serving, spread a layer of mini marshmallows on top of the cheesecake and place under a broiler until golden brown.
