Rocky Road Cheesecake Recipe

Ingredients:

  • 2 cups vanilla wafer crumbs
  • 1/3 cup unsalted butter, melted
  • 4 containers (8oz each) Norman's Kosher Cholov Yisroel Cream Cheese, at room temperature
  • 1 cup granulated sugar
  • 3 eggs, at room temperature
  • 1/2 cup sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup chopped walnuts
  • 1/2 cup mini marshmallows

Instructions:

  1. Preheat oven to 350°F.
  2. In a medium bowl, mix vanilla wafer crumbs and melted butter. Press mixture onto bottom of 9-inch springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time.
  4. Stir in sour cream, vanilla extract, chocolate chips, walnuts and mini marshmallows.
  5. Pour mixture into crust.
  6. Bake for 1 hour and 10 minutes or until center is almost set.
  7. Let the cheesecake cool to room temperature on a wire rack, then refrigerate for at least 3 hours or overnight.
  8. Before serving, spread a layer of mini marshmallows on top of the cheesecake and place under a broiler until golden brown.
