Wine & Berry Delight Cheesecake Recipe

Ingredients:

  • 12 Black & White Cookies, crushed into crumbs
  • ½ cup unsalted butter, melted
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • ½ cup granulated sugar
  • 2 tbsp all-purpose flour
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¾ cup red wine
  • 1 cup mixed berries (blueberries, raspberries, blackberries), fresh or frozen
  • 1 cup peanut butter cups, chopped

Instructions:

  1. Preheat oven to 350°F.
  2. In a bowl, mix together the crushed Black & White cookies and melted butter. Press the mixture onto the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let cool.
  3. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, sugar, and flour until creamy. Add eggs, one at a time, and beat until smooth. Stir in vanilla extract.
  4. In a saucepan, combine red wine and mixed berries and cook over medium heat until the berries are soft and the mixture is slightly thickened. Let cool and then puree in a blender until smooth.
  5. Stir the wine and berry mixture into the cream cheese mixture until well combined. Pour the mixture over the cooled crust. Bake for 35-40 minutes or until the center is almost set. Let cool to room temperature, then chill in the refrigerator for at least 2 hours before serving.
  6. Before serving, top the cheesecake with chopped peanut butter cups.
