Pistachio Cheesecake with Greek Yogurt & Berries
Ingredients:
- 1 1/2 cups Pistachio Crumbles
- 1/4 cups melted butter
- 8oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup Greek yogurt
- 1/4 cup honey
- 2 eggs
- 1 tsp vanilla extract
- 1 cup mixed berries, fresh or frozen
- 1/2 cup heavy cream
- 1 tbsp powdered sugar
Instructions:
- Preheat oven to 350°F.
- In a mixing bowl, combine the pistachio crumbles and melted butter.
- Press the mixture into the bottom of a 9-inch springform pan.
- In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth using an electric mixer.
- Add the Greek yogurt and mix well until smooth.
- Mix in the honey, eggs, and vanilla extract until the filling is smooth.
- Pour the filling over the pistachio crust.
- Bake the cheesecake for 35-40 minutes or until the center is set.
- Remove from the oven and let cool to room temperature.
- In a mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form.
- Spoon the mixed berries over the cooled cheesecake and top with the whipped cream.
