Say cheese! Meet your new personalized cheesecake recipe:

Pistachio Cheesecake with Greek Yogurt & Berries

Ingredients:

  • 1 1/2 cups Pistachio Crumbles
  • 1/4 cups melted butter
  • 8oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup mixed berries, fresh or frozen
  • 1/2 cup heavy cream
  • 1 tbsp powdered sugar

Instructions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine the pistachio crumbles and melted butter.
  3. Press the mixture into the bottom of a 9-inch springform pan.
  4. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth using an electric mixer.
  5. Add the Greek yogurt and mix well until smooth.
  6. Mix in the honey, eggs, and vanilla extract until the filling is smooth.
  7. Pour the filling over the pistachio crust.
  8. Bake the cheesecake for 35-40 minutes or until the center is set.
  9. Remove from the oven and let cool to room temperature.
  10. In a mixing bowl, beat the heavy cream and powdered sugar until stiff peaks form.
  11. Spoon the mixed berries over the cooled cheesecake and top with the whipped cream.
