Date & Walnut Cheesecake with Greek Yogurt & Honey Filling and Macadamia Nut Topping

Ingredients:

  • 1 1/2 cups pitted dates, finely chopped
  • 1 1/2 cups raw walnuts, finely chopped
  • 8 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup macadamia nuts, chopped
  • 2 tablespoons unsalted butter, melted

Instructions:

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine chopped dates and walnuts. Add melted butter and stir until the mixture is well-combined.
  3. Press the date and walnut mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
  4. In a large mixing bowl, beat softened Norman's Kosher Cholov Yisroel Cream Cheese until smooth and creamy.
  5. Add Greek yogurt and honey to the cream cheese, and beat until well-combined.
  6. Add eggs, one at a time, and vanilla extract, and beat until mixture is smooth and creamy.
  7. Pour the cheesecake filling over the cooled date and walnut crust.
  8. Bake for 35-40 minutes, or until the cheesecake is set and the edges are golden brown.
  9. Remove the cheesecake from the oven and let cool for 10 minutes.
  10. Sprinkle chopped macadamia nuts over the top of the cheesecake, and return to the oven for an additional 10 minutes.
  11. Remove the cheesecake from the oven and let cool to room temperature before serving.
