Vanilla Wafer Base
- 1 1/2 cups vanilla wafer crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
Plain Filling
- 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup sugar
- 1 tablespoon vanilla extract
- 4 large eggs
Chocolate Ganache Topping
- 1/2 cup heavy cream
- 1 cup semisweet chocolate chips
- 1 teaspoon vanilla extract
Directions
- Preheat oven to 350°F. Grease a 9-inch springform pan.
- In a small bowl, combine cookie crumbs, sugar, and melted butter. Press onto bottom of prepared pan.
- In a large bowl, beat cream cheese, sugar, and vanilla extract with an electric mixer on medium speed until creamy.
- Add eggs, one at a time, beating on low speed after each until just blended. Pour over crust in pan.
- Bake for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes.
- In a small saucepan, heat cream over medium heat until bubbles form around edges. Remove from heat; stir in chocolate chips and vanilla extract until melted and smooth. Spread over cheesecake.
- Refrigerate for at least 4 hours before serving.
