Vanilla Wafer Base

  • 1 1/2 cups vanilla wafer crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted

Plain Filling

  • 3 containers (24 oz) Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup sugar
  • 1 tablespoon vanilla extract
  • 4 large eggs

Chocolate Ganache Topping

  • 1/2 cup heavy cream
  • 1 cup semisweet chocolate chips
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 350°F. Grease a 9-inch springform pan.
  2. In a small bowl, combine cookie crumbs, sugar, and melted butter. Press onto bottom of prepared pan.
  3. In a large bowl, beat cream cheese, sugar, and vanilla extract with an electric mixer on medium speed until creamy.
  4. Add eggs, one at a time, beating on low speed after each until just blended. Pour over crust in pan.
  5. Bake for 45-50 minutes or until center is almost set. Cool on a wire rack for 10 minutes.
  6. In a small saucepan, heat cream over medium heat until bubbles form around edges. Remove from heat; stir in chocolate chips and vanilla extract until melted and smooth. Spread over cheesecake.
  7. Refrigerate for at least 4 hours before serving.
