Ingredients for Oreo Base:

  • 25 Oreo cookies, crushed into fine crumbs
  • 1/4 cup unsalted butter, melted

Ingredients for Plain Filling:

  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1/4 cup sour cream

Ingredients for Caramel Sauce Topping:

  • 1/4 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt

Instructions:

  1. Preheat oven to 350°F.
  2. Grease a 9-inch springform pan and line the bottom with parchment paper.
  3. In a bowl, mix together the crushed Oreo cookies and melted butter.
  4. Press Oreo mixture evenly into the bottom of the prepared pan. Bake in preheated oven for 10 minutes, then remove and let cool.
  5. In a large mixing bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese and sugar until creamy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream and mix until smooth.

  8. To make the caramel sauce, melt butter in a small saucepan over medium heat. Add brown sugar and whisk until combined. Pour in heavy cream and bring to a simmer. Remove from heat and stir in vanilla extract and kosher salt.
  9. Pour caramel sauce over cheesecake and serve chilled.
