Whiskey & Chocolate Cheesecake

Ingredients:

  • 2 cups Vanilla wafers, crushed
  • 1/2 cup unsalted butter, melted
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 4 eggs
  • 1/4 cup Whiskey
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1 cup heavy cream
  • 1/2 cup semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 325°F.
  2. In a bowl, combine crushed vanilla wafers and melted butter. Press firmly onto the bottom of a 9-inch springform pan.
  3. In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, and flour until smooth.
  4. Add eggs, one at a time, whisking well after each addition.
  5. Mix in Whiskey and melted chocolate chips until well combined.
  6. Pour the cheesecake mixture onto the crust and bake for 45-50 minutes or until the center is almost set.
  7. Remove from oven and let cool for 10 minutes, then run a knife around the edges of the pan to loosen the cheesecake.
  8. Let cool completely in the pan before transferring to a serving plate and refrigerating for at least 2 hours.
  9. In a small saucepan, heat heavy cream until it just begins to simmer, then remove from heat and add semi-sweet chocolate chips.
  10. Whisk until smooth and pour over the cheesecake before serving.
