Whiskey & Chocolate Cheesecake
Ingredients:
- 2 cups Vanilla wafers, crushed
- 1/2 cup unsalted butter, melted
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup all-purpose flour
- 4 eggs
- 1/4 cup Whiskey
- 1/2 cup semi-sweet chocolate chips, melted
- 1 cup heavy cream
- 1/2 cup semi-sweet chocolate chips
Instructions:
- Preheat oven to 325°F.
- In a bowl, combine crushed vanilla wafers and melted butter. Press firmly onto the bottom of a 9-inch springform pan.
- In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, and flour until smooth.
- Add eggs, one at a time, whisking well after each addition.
- Mix in Whiskey and melted chocolate chips until well combined.
- Pour the cheesecake mixture onto the crust and bake for 45-50 minutes or until the center is almost set.
- Remove from oven and let cool for 10 minutes, then run a knife around the edges of the pan to loosen the cheesecake.
- Let cool completely in the pan before transferring to a serving plate and refrigerating for at least 2 hours.
- In a small saucepan, heat heavy cream until it just begins to simmer, then remove from heat and add semi-sweet chocolate chips.
- Whisk until smooth and pour over the cheesecake before serving.
