Feta & Spinach Cheesecake with Whiskey & Chocolate Filling and Chocolate Ganache Topping

Ingredients:

  • Crust:
  • 1 cup crumbled Feta cheese
  • 1 cup chopped Spinach
  • 1/2 cup all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 1 large egg yolk
  • Filling:
  • 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese
  • 3/4 cup sugar
  • 1/4 cup all-purpose flour
  • 2 large eggs, lightly beaten
  • 1/4 cup whiskey
  • 1/4 cup chocolate chips, melted
  • 1/4 teaspoon salt
  • Ganache Topping:
  • 1 cup chocolate chips
  • 1/2 cup heavy cream

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Crust:
    1. In a medium bowl, mix together feta cheese, chopped spinach, flour, melted butter, and egg yolk. Press the mixture into the bottom of a 9-inch springform pan.
    2. Bake for 10-12 minutes or until golden brown. Remove from the oven and let cool completely.
  3. Filling:
    1. In a large bowl, beat cream cheese until smooth and creamy.
    2. Add sugar and mix until creamy.
    3. Blend in flour and eggs, one at a time.
    4. Stir in whiskey, melted chocolate, and salt.
  4. Assembly:
    1. Pour filling over the crust.
    2. Bake for 45 to 50 minutes or until the center is almost set.
    3. Remove from the oven and let cool in the pan for 10 minutes. Run a knife around the edges of the pan to loosen the cheesecake.
    4. Refrigerate for at least 2 hours or overnight.
  5. Ganache Topping:
    1. In a small saucepan, heat heavy cream until hot but not boiling.
    2. Remove from heat and stir in chocolate chips until melted and smooth.
    3. Pour the ganache over the chilled cheesecake and spread evenly.
    4. Refrigerate for another 30 minutes or until ganache is set.
  6. Serve:
    1. Remove the sides of the springform pan and slice cheesecake into wedges.
    2. Serve chilled and enjoy!
