Acai Berry Greek Yogurt Cheesecake with Rose Topping

Ingredients:

  • Crust:
  • 1 1/2 cups Acai berry granola
  • 1/3 cup melted unsalted butter
  • Filling:
  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup Greek yogurt
  • 1/2 cup honey
  • 2 eggs
  • Topping:
  • 1/4 cup rose petals
  • 1/2 cup sugar
  • 1/2 cup water
  • 1 tbsp rose water

Instructions:

  1. Preheat oven to 350°F.
  2. Mix granola and melted butter in a bowl until it resembles wet sand. Press mixture into the bottom of a 9-inch springform pan and bake for 10 minutes. Remove from oven and cool.
  3. In a large bowl, beat the Norman's Kosher Cholov Yisroel Cream Cheese until smooth. Add Greek yogurt and honey; beat until combined. Add eggs, one at a time, beating well after each addition.
  4. Pour the filling onto the cooled crust and bake for 30-35 minutes or until the center is almost set. Remove from oven and cool.
  5. In a small pot, combine rose petals, sugar, and water. Boil until the sugar is dissolved. Remove from heat and add rose water. Let cool.
  6. Top cheesecake with the cooled rose syrup and chill for at least 2 hours.
  7. When ready to serve, remove from springform pan and slice into pieces.
