Cheesecake Delight Recipe

Vanilla Wafer Base Ingredients:

  • 1 1/2 cups vanilla wafer crumbs
  • 1/3 cup butter, melted
  • 2 tablespoons granulated sugar

New York-style Filling Ingredients:

  • 24 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1/2 cup sour cream

Peach & Mango Topping Ingredients:

  • 2 cups sliced peaches
  • 1 cup diced mango
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Directions:

Vanilla Wafer Base:

  1. Preheat oven to 350°F.
  2. Mix vanilla wafer crumbs, melted butter, and granulated sugar together.
  3. Press mixture into a 9-inch springform pan.
  4. Bake for 10 minutes. Let it cool to room temperature.

New York-style Filling:

  1. Beat Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, flour, and vanilla extract at medium speed with an electric mixer until creamy.
  2. Add eggs, one at a time, beating just until the yellow disappears after each egg is added.
  3. Stir in sour cream.
  4. Pour mixture over crust.
  5. Bake at 350°F for 50 minutes or until center is almost set. Let it cool to room temperature.

Peach & Mango Topping:

  1. Combine peaches, mango, granulated sugar, and water in a saucepan.
  2. Stir together cornstarch and 1 tablespoon water until smooth.
  3. Add the cornstarch mixture to the saucepan; bring to a boil over medium heat, stirring constantly.
  4. Boil, stirring constantly, for 1 minute or until thickened; let it cool to room temperature.
  5. Pour the cooled topping over the cheesecake.

Refrigerate the cheesecake for at least 4 hours and serve chilled.
