Cheesecake Delight Recipe
Vanilla Wafer Base Ingredients:
- 1 1/2 cups vanilla wafer crumbs
- 1/3 cup butter, melted
- 2 tablespoons granulated sugar
New York-style Filling Ingredients:
- 24 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 3 tablespoons all-purpose flour
- 1 teaspoon vanilla extract
- 3 eggs
- 1/2 cup sour cream
Peach & Mango Topping Ingredients:
- 2 cups sliced peaches
- 1 cup diced mango
- 1/4 cup granulated sugar
- 1/4 cup water
- 1 tablespoon cornstarch
Directions:
Vanilla Wafer Base:
- Preheat oven to 350°F.
- Mix vanilla wafer crumbs, melted butter, and granulated sugar together.
- Press mixture into a 9-inch springform pan.
- Bake for 10 minutes. Let it cool to room temperature.
New York-style Filling:
- Beat Norman's Kosher Cholov Yisroel Cream Cheese, granulated sugar, flour, and vanilla extract at medium speed with an electric mixer until creamy.
- Add eggs, one at a time, beating just until the yellow disappears after each egg is added.
- Stir in sour cream.
- Pour mixture over crust.
- Bake at 350°F for 50 minutes or until center is almost set. Let it cool to room temperature.
Peach & Mango Topping:
- Combine peaches, mango, granulated sugar, and water in a saucepan.
- Stir together cornstarch and 1 tablespoon water until smooth.
- Add the cornstarch mixture to the saucepan; bring to a boil over medium heat, stirring constantly.
- Boil, stirring constantly, for 1 minute or until thickened; let it cool to room temperature.
- Pour the cooled topping over the cheesecake.
Refrigerate the cheesecake for at least 4 hours and serve chilled.
