Rocky Road Cheesecake Recipe
Graham Cracker Base
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
Mix graham cracker crumbs, melted butter and sugar together. Press onto bottom of 9-inch springform pan. Chill for 30 minutes.
Rocky Road Filling
- 16 ounces Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup heavy cream
- 1/2 cup unsweetened cocoa powder
- 1/2 cup mini marshmallows
- 1/2 cup chopped almonds
- 1/2 cup semisweet chocolate chips
Preheat oven to 325°F. In a large bowl, beat cream cheese until creamy. Gradually add sugar while beating. Beat in eggs one at a time, then add heavy cream and cocoa powder. Fold in mini marshmallows, chopped almonds, and semisweet chocolate chips. Pour mixture into prepared crust. Bake for 50 minutes or until center is almost set. Allow to cool completely before refrigerating overnight.
Whipped Cream & Cherry Topping
- 1 cup heavy cream
- 3 tablespoons confectioner's sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup canned cherry pie filling
Beat heavy cream, confectioner's sugar, and vanilla extract together until soft peaks form. Spread whipped cream over chilled cheesecake and top with cherry pie filling.
