Celestial Wine & Berry Cheesecake
Hemp Hearts Base
- 1 1/2 cups Hemp Hearts
- 1/4 cup melted butter
- 1/4 cup honey
Wine & Berries Filling
- 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
- 1/2 cup honey
- 3 eggs
- 1/2 cup red wine
- 1 cup mixed berries (fresh or frozen)
Toasted Almonds Topping
- 1/2 cup sliced almonds
- 2 tablespoons honey
Instructions
- Preheat oven to 350°F.
- Mix all ingredients for the Hemp Hearts base in a bowl and press into a 9-inch springform pan. Set aside.
- Beat Norman's Kosher Cholov Yisroel Cream Cheese and honey together until creamy. Add eggs and beat until well combined.
- Stir in red wine and mixed berries. Pour mixture onto the Hemp Hearts base.
- Bake for 45-50 minutes or until the cheesecake is set. Allow to cool before adding toppings.
- To toast the almonds, place them in a dry skillet over medium heat for 3-5 minutes or until lightly browned. Add honey and stir to combine.
- Sprinkle toasted almonds on top of the cheesecake and serve chilled.
