Celestial Wine & Berry Cheesecake

Hemp Hearts Base

  • 1 1/2 cups Hemp Hearts
  • 1/4 cup melted butter
  • 1/4 cup honey

Wine & Berries Filling

  • 16 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1/2 cup honey
  • 3 eggs
  • 1/2 cup red wine
  • 1 cup mixed berries (fresh or frozen)

Toasted Almonds Topping

  • 1/2 cup sliced almonds
  • 2 tablespoons honey

Instructions

  1. Preheat oven to 350°F.
  2. Mix all ingredients for the Hemp Hearts base in a bowl and press into a 9-inch springform pan. Set aside.
  3. Beat Norman's Kosher Cholov Yisroel Cream Cheese and honey together until creamy. Add eggs and beat until well combined.
  4. Stir in red wine and mixed berries. Pour mixture onto the Hemp Hearts base.
  5. Bake for 45-50 minutes or until the cheesecake is set. Allow to cool before adding toppings.
  6. To toast the almonds, place them in a dry skillet over medium heat for 3-5 minutes or until lightly browned. Add honey and stir to combine.
  7. Sprinkle toasted almonds on top of the cheesecake and serve chilled.
