Vanilla Wafer Base

  • 1 1/2 cups vanilla wafer cookie crumbs
  • 2 tablespoons granulated sugar
  • 6 tablespoons unsalted butter, melted

Salted Caramel Filling

  • 24 oz Norman's Kosher Cholov Yisroel Cream Cheese, softened
  • 1 cup granulated sugar
  • 4 eggs
  • 1/2 cup heavy cream
  • 1/2 cup salted caramel sauce

Whipped Cream Topping

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F and grease a 9-inch springform pan.
  2. In a medium bowl, combine vanilla wafer crumbs, 2 tablespoons sugar, and melted butter. Press the mixture onto the bottom of the prepared pan. Bake for 10 minutes.
  3. In a large bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese and 1 cup sugar with an electric mixer on medium speed until smooth. Beat in eggs one at a time. Add heavy cream and salted caramel sauce, and beat until well combined and creamy.
  4. Pour the filling over the crust and bake for 45-50 minutes, or until the edges are set and the center is slightly jiggly.
  5. Remove the cheesecake from the oven and let it cool to room temperature. Then, refrigerate for at least 2 hours or overnight.
  6. Before serving, prepare the whipped cream topping. In a medium bowl, beat heavy cream, powdered sugar, and vanilla extract on high speed with an electric mixer until stiff peaks form. Spread the whipped cream over the chilled cheesecake.
