Cheesy Garlic Delight Cheesecake

Ingredients:

  • For the Parmesan & Garlic Base:
    • 1 1/2 cups of Parmesan cheese, finely grated
    • 1/2 teaspoon of kosher salt
    • 1/2 teaspoon of black pepper
    • 1 cup of panko bread crumbs
    • 1/2 cup of unsalted butter, melted
    • 2 cloves of garlic, minced
  • For the New York-style Filling:
    • 4 containers of Norman's Kosher Cholov Yisroel Cream Cheese, softened
    • 1 1/2 cups of granulated sugar
    • 1/2 cup of sour cream
    • 1/2 cup of heavy cream
    • 2 tablespoons of cornstarch
    • 1 tablespoon of pure vanilla extract
    • 4 large eggs
  • For the Whipped Cream Topping:
    • 1 cup of heavy cream
    • 1/4 cup of confectioners' sugar
    • 1 teaspoon of pure vanilla extract

Directions:

  1. Preheat oven to 350°F. Wrap the outside of a 9-inch springform pan with aluminum foil.
  2. For the Parmesan & Garlic Base:
    1. In a medium mixing bowl, combine the Parmesan cheese, salt, pepper, breadcrumbs, melted butter, and minced garlic. Stir well to combine.
    2. Press the mixture into the bottom of the prepared pan, and bake for 10-12 minutes, until golden brown. Let cool completely while preparing the filling.
  3. For the New York-style Filling:
    1. In a large mixing bowl, beat the cream cheese until light and fluffy, about 3-4 minutes.
    2. Add the sugar and beat for another 2-3 minutes.
    3. Beat in the sour cream, heavy cream, cornstarch, and vanilla extract until incorporated.
    4. Beat in the eggs, one at a time, ensuring each egg is fully incorporated before adding the next.
    5. Pour the filling over the cooled crust, and smooth out the top with an offset spatula.
    6. Bake the cheesecake for 50-55 minutes, until the edges are set and the center still jiggles slightly.
    7. Turn off the oven and let the cheesecake cool inside for 30 minutes, then transfer to the refrigerator to chill for at least 3 hours or overnight.
  4. For the Whipped Cream Topping:
    1. In a large mixing bowl, beat the heavy cream until soft peaks form.
    2. Add the confectioners' sugar and vanilla extract, and continue to beat until stiff peaks form.
    3. Spread the whipped cream on top of the chilled cheesecake, and serve!
