Citrus Dream Cheesecake
Thyme & Lemon Base
1 1/2 cups of cookie crumbs
1/2 cup of melted butter
1 tablespoon of fresh thyme leaves
Zest of 1 lemon
Cookies & Cream Filling
3 containers of NORMAN’S KOSHER CHOLOV YISROEL CREAM CHEESE, softened
1 cup of granulated sugar
1 teaspoon of vanilla extract
3 large eggs
1 cup of crushed chocolate cookies
Pineapple & Kiwi Topping
1 cup of diced pineapple
1 cup of diced kiwi
1/4 cup of granulated sugar
1/4 cup of water
Instructions
Preheat oven to 325°F (160°C).
Mix cookie crumbs, melted butter, thyme leaves, and lemon zest together and press into the bottom of a 9-inch springform pan.
In a large bowl, beat cream cheese, sugar, and vanilla extract until creamy.
Add eggs, one at a time, and mix well after each addition.
Gently stir in crushed cookies.
Pour mixture over the crust and smooth the top.
Bake for 50-60 minutes or until the edges are set and the center is slightly jiggly.
Allow cheesecake to cool completely at room temperature before refrigerating for at least 4 hours or overnight.
In a small saucepan, heat diced pineapple, diced kiwi, granulated sugar, and water over medium heat. Stir occasionally until the sugar is dissolved and the fruit is slightly softened.
Remove from heat and cool to room temperature.
Spoon the fruit mixture over the cheesecake before serving.
