The Decadent Bourbon Butterscotch Cheesecake

Ingredients:

  • 1 1/2 cups crushed Oreos
  • 3 tablespoons unsalted melted butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 3 tablespoons bourbon
  • 1/3 cup butterscotch sauce
  • 4 containers (32 oz.) Norman's Kosher Cholov Yisroel Cream Cheese
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1/2 cup sour cream

Instructions:

  1. Preheat oven to 350°F.
  2. Wrap the outside of a 9-inch springform pan with aluminum foil.
  3. Mix crushed Oreos and melted butter until well combined and press into the bottom of the prepared pan.
  4. Bake the crust for 8 minutes and let it cool.
  5. In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until light and fluffy.
  6. Gradually add granulated sugar and brown sugar; beat until well combined.
  7. Add bourbon and butterscotch sauce, and combine well.
  8. Add eggs, one at a time, beating well after each addition.
  9. Stir in vanilla extract and sour cream until well blended.
  10. Pour the mixture over the crust.
  11. Bake for 60-70 minutes or until the cheesecake sets.
  12. Remove from the oven and let it cool. Chill cheesecake overnight or for at least 4 hours.
  13. Before serving, top with additional butterscotch sauce and whipped cream.
