The Decadent Bourbon Butterscotch Cheesecake
Ingredients:
- 1 1/2 cups crushed Oreos
- 3 tablespoons unsalted melted butter
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar
- 3 tablespoons bourbon
- 1/3 cup butterscotch sauce
- 4 containers (32 oz.) Norman's Kosher Cholov Yisroel Cream Cheese
- 4 large eggs
- 1 tablespoon vanilla extract
- 1/2 cup sour cream
Instructions:
- Preheat oven to 350°F.
- Wrap the outside of a 9-inch springform pan with aluminum foil.
- Mix crushed Oreos and melted butter until well combined and press into the bottom of the prepared pan.
- Bake the crust for 8 minutes and let it cool.
- In a mixing bowl, beat Norman's Kosher Cholov Yisroel Cream Cheese until light and fluffy.
- Gradually add granulated sugar and brown sugar; beat until well combined.
- Add bourbon and butterscotch sauce, and combine well.
- Add eggs, one at a time, beating well after each addition.
- Stir in vanilla extract and sour cream until well blended.
- Pour the mixture over the crust.
- Bake for 60-70 minutes or until the cheesecake sets.
- Remove from the oven and let it cool. Chill cheesecake overnight or for at least 4 hours.
- Before serving, top with additional butterscotch sauce and whipped cream.
