Oreo Granola Maple Cheesecake with Berries and Cream Topping

Ingredients:

  • 25 Oreo cookies, crushed
  • 1 cup granola
  • 4 tablespoons melted butter
  • 4 containers Norman's Kosher Cholov Yisroel cream cheese, at room temperature
  • 1 1/2 cups granulated sugar
  • 1 tablespoon vanilla extract
  • 1/2 cup maple syrup
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup mixed berries, for topping
  • 1/2 cup whipped cream, for topping

Instructions:

  1. Preheat the oven to 350°F and grease a 9-inch springform pan.
  2. In a medium bowl, mix together the crushed Oreos, granola, and melted butter. Press the mixture into the bottom of the prepared pan and set aside.
  3. In a large bowl, beat the cream cheese until smooth and creamy.
  4. Add the sugar, vanilla extract, and maple syrup. Beat until fully incorporated.
  5. Add eggs one at a time, beating well after each addition.
  6. Stir in the sour cream and heavy cream. Pour the mixture into the crust and smooth the top.
  7. Bake for 45-50 minutes, or until the cheesecake is set in the center but still slightly jiggly.
  8. Place on a wire rack and let cool to room temperature.
  9. Refrigerate for at least 4 hours, or overnight.
  10. Before serving, top with mixed berries and whipped cream.
