Oreo Granola Maple Cheesecake with Berries and Cream Topping
Ingredients:
- 25 Oreo cookies, crushed
- 1 cup granola
- 4 tablespoons melted butter
- 4 containers Norman's Kosher Cholov Yisroel cream cheese, at room temperature
- 1 1/2 cups granulated sugar
- 1 tablespoon vanilla extract
- 1/2 cup maple syrup
- 4 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1 cup mixed berries, for topping
- 1/2 cup whipped cream, for topping
Instructions:
- Preheat the oven to 350°F and grease a 9-inch springform pan.
- In a medium bowl, mix together the crushed Oreos, granola, and melted butter. Press the mixture into the bottom of the prepared pan and set aside.
- In a large bowl, beat the cream cheese until smooth and creamy.
- Add the sugar, vanilla extract, and maple syrup. Beat until fully incorporated.
- Add eggs one at a time, beating well after each addition.
- Stir in the sour cream and heavy cream. Pour the mixture into the crust and smooth the top.
- Bake for 45-50 minutes, or until the cheesecake is set in the center but still slightly jiggly.
- Place on a wire rack and let cool to room temperature.
- Refrigerate for at least 4 hours, or overnight.
- Before serving, top with mixed berries and whipped cream.
